At the centre of the current concerns of both consumers and the authorities, food safety comes through mastering microbiological quality. Neither traditional analytical methods nor alternative methods developed up until now meet current requirements in terms of time, sensitivity, or specificity. Thanks to a new approach, MêTiS Biotechnologies has developed analytical methods which provide a satisfactory answer both to consumer requirements and to the restrictions placed on the farming and foodstuffs industries.
